If you didn’t know the world of fermentation and food preservation could be fascinating, downright delicious and, well, mind-bendingly cool, chances are you’ve never come across Kenji Morimoto or his new cookbook, Ferment. Get down to Elliott’s to see this fermenting guru in action as he talks with Candice Chung, sharing stories and tips on how to fold the ancient technique of food preservation and flavour into your everyday cooking – then taste for yourself what he’s created.
